Mediterranean Salad

INGREDIENTS
  • 2 cucumbers 
  • 1 courgette 
  • 1 carrot
  • 1 yellow pepper halve, core, remove white skin and cut into strips.
  • 300g feta cheese cut in cubes
  • 90g black olives stoned slice
  • 250g cherry tomatoes, halved
  • 1 red onion peel, halve and slice the onions
  • 3 oregano or basil sprigs - pluck off leaves and chop coarsely
  • 10cl olive oil
  • 3tbsp lime juice
  • 1tbsp (white) balsamic vinegar
  • Sea salt and black pepper freshly ground

METHOD

  • To make the dressing - mix together the olive oil, lemon juice, vinegar and oregano.
  • To prepare the cucumber - peel 1 cucumber, cut in half lengthways and scrape out the seeds with a teaspoon, slice the cucumber. Sprinkle the sliced cucumber with some salt in a separate bowl and allow to draw for a few minutes. Then squeeze out. Cut the other cucumber into spirals using a Swiss peeler with the straight blade and green attachment.
  • To preare the courgette - use the Swiss peeler with the julienne blade and green attachment to cut into spaghetti.
  • To prepare the carrot - peel and use the Swiss peeler with the julienne blade and orange attachment to cut into spaghetti.
  • Place the sliced cucumber in a bowl with the yellow pepper, black olives, feta cheese, tomatoes and red onions. Add the dressing and mix together well. Season with sea salt and pepper.
  • Arrange the salad onto a large platter, or in a bowl. Decorate with the spirals of cucumber, courgette and carrot.
  • Season to taste with salt and pepper.
